1. Preheat oven to 400° F.

Spread thawed hash browns on a large cookie sheet with sides. Pour butter, Italian seasoning and cayenne over the hash browns and mix well. Top with cheddar cheese.
3. Bake for 20 minutes, uncovered.
4. Remove the hash brown mix from the oven and create 6 pockets. Crack eggs into pockets and place bacon slices over hash brown areas.
5. Add salt and pepper to taste, top with bell pepper, chives and shredded Parmesan cheese.
6. Bake for 10 minutes, uncovered.
