1. Add blueberries, vinegar, wine, thyme, nutmeg, sugar and honey to a medium pan.
2. Bring to a boil. Turn heat to simmer and continue to cook until sauce has reduced in half.
3. Stir in lemon juice and butter. Simmer 1–2 minutes or until sauce thickens slightly.
4. Season sauce with salt and pepper, to taste. Serve sauce over prepared chops.
Tip: For a thicker sauce, dissolve 1 tsp corn starch with 1 oz. cold water. Stir corn starch mixture in after step 3 and cook additional 1–3 minutes or to desired consistency.
