Citrus-Brined Pork Chops

Brining helps to ensure chops are juicy and tasty. Using orange juice instead of water brings a sweet quality to the chops. Plan ahead by starting the brine the day before.

Instructions

1. Bring 1 quart of the orange juice, salt, bay leaf, fennel seeds, peppercorns and chili flakes to a simmer.

2. Blend mixture with remaining juice and orange slices.

3. Cover and refrigerate one hour or until mixture is cold.

4. Place chops in a large reseable bag and pour in brine.

5. Seal bag, pressing out air, and refrigerate for 12 hours or overnight.

6. Remove chops from brine, pat dry, and coat with olive oil. Discard brine.

7. Grill according to package instructions.
