Grilled Asparagus and Portabella Salad

Take a simple salad to spectacular with a basic balsamic marinade.

The marinade gives the asparagus and mushrooms a sweet tangy flavor when grilled.


  • 1 pkg (8oz)
    whole baby Bella mushrooms
  • 3/4 cup
    balsamic vinaigrette dressing
  • 3 cups
    fresh baby spinach
  • 4
    radishes, sliced
  • 1/2 cup
    shaved Parmesan cheese
  • Salt and pepper, to taste


1. Place asparagus, mushrooms and 1/2 cup of dressing into a glass dish. Cover and marinade in refrigerator 30 minutes or overnight.

2. Preheat grill on medium-high heat.

3. Grill Asparagus and mushrooms for 5-7 minutes or until nice grill marks appear.

4. Toss spinach with remaining dressing and place on serving platter.

5. Top with grilled asparagus and mushrooms, radishes and Parmesan cheese.
