1. Preheat over to 375 degrees.
2. Slice 3/4 of the way into each chicken breast, careful not to cut all the way through.
3. Stuff Spinach and Artichoke Dip into each chicken breast opening.
4. Brush with olive oil and sprinkle with Italian seasoning.
5. Bake in a 9x13 baking dish uncovered for 45 minutes, or until chicken is cooked through.
