1. Preheat oven to 400°F.
2. Mash prepared potatoes and stir in butter, sugar, syrup, zest and salt.
3. Spoon sweet potatoes into 8 (6 oz.) ramekin cups and place on baking sheet.
4. Beat egg whites at high speed until foamy. Add 1 Tbsp sugar at a time and continue beating until stiff peaks form and sugar is dissolved.
5. Spread meringue over sweet potato mixture.
6. Bake on lower oven rack 10 minutes or until golden brown
