Not readily available at fresh fish counters, orange roughy has a delicate flavor and fabulously large-flaked meat that remains moist and holds its shape when cooked.

Preparation

  • Prepare from THAWED State.
  • Appliances may vary, adjust accordingly.
  • TO THAW SLOWLY: Remove fish from vacuum wrap and thaw in the refrigerator overnight.
  • TO THAW QUICKLY: Keep fish in vacuum wrap and thaw in cold running water for 30 minutes.
  • 1. Preheat grill to medium heat.
  • 2. Brush 2 fillets with olive oil, butter or margarine on both sides. Season as desired.
  • 3. Place fillets in a single layer onto aluminum foil
  • 4. Grill for 7 minutes and turn over.
  • 5. Grill for 6 - 7 minutes until fish flakes easily with a fork.
  • 6. Let stand 1 minute.
  • Promptly refrigerate any unused heated portion.
  • FOR FOOD SAFETY AND QUALITY, FOLLOW THESE COOKING INSTRUCTIONS. THIS PRODUCT MUST BE COOKED TO AN INTERNAL TEMPERATURE OF 145°F PRIOR TO EATING.

  • 2. Brush 2 fillets with olive oil, butter or margarine on both sides. Season as desired.
  • 3. Place fillets in a single layer into skillet and cover.
  • 4. Cook for 5 minutes and turn over.
  • 5. Cook for 5 - 6 minutes until fish flakes easily with a fork
  • 6. Let stand 1 minute.
  • Promptly refrigerate any unused heated portion.

  • 3. Place fillets in a single layer onto a foil-lined baking sheet.
  • 4. Bake on center rack for 7 minutes and turn over.
  • 5. Bake for 7 - 8 minutes until fish flakes easily with a fork.
  • 6. Let stand 1 minute.
  • Promptly refrigerate any unused heated portion.
